These Cinnamon Apple Baked Doughnuts not only look cute and but are also bursting with a flavour combination that is a marriage in heaven. Apples and cinnamon, what is there not to like?

Ingredients
Doughnut mix (150g plain flour, 100g sugar, ½ tsp baking powder, ½ tsp cinnamon, 10g vegan milk powder)
35g dried apple chopped and soaked in 50ml water for 10 mins in boiling
Glaze mix (10g vegan milk powder, 150g icing sugar, ¼ tsp green food colour)
1 egg (or 1 flax egg)
60ml melted butter (dairy or plant)
90ml water for doughnuts, 1-2 tbs. water for glaze

Directions
Soak the dried apple pieces in 50ml boiling water and set aside.
Grease a 6 cavity doughnut mould. If you do not have one they are included in our full baked chocolate and cinnamon doughnuts kit. https://www.mondessert.co.uk/products/doughnut-kit
Preheat oven to 200 C
In a large bowl empty doughnut mix.
In another bowl, whisk together 40ml warer, eggs and 60ml melted butter. Stir in soaked apple pieces
Fold wet ingredients with dry ingredients, just until combined; do not over-mix or it won’t be as tender.
Spoon or pipe batter into greased doughnut mould until batter is 2mm shy with the top of the mould. You should still have enough batter for a second batch.
Use damp fingers to gently smooth out the tops.
Bake about 7 minutes or until lightly golden. Cool in pan slightly, just until they are able to be easily removed. Go carefully so you do not damage the underside of the doughnuts.
Leave on wire rack, the underside will be the side you want to show off, so do not worry if tops are a little jagged.
Make your second batch whilst 1st batch cooling. You should have enough batter for 10-12 doughnuts.
Meanwhile get on with your glaze.
Whisk together sieved glaze mix and water, dunk nice side of doughnut into glaze to coat. Enjoy immediately.
