Chia pudding is high in protein, full of omega-3s, packed with fibre and helps keep you full and satisfied all day long. This one is great to make over night and enjoyed 1-3 days later.
The kit makes 4 hearty bowls or you could make 8 mini bowls in ramekins. With cocoa plant chocolate, pistachios and coconut, all you need do is add seasonal fresh fruit.

40g coconut sugar
50g coconut milk powder
50g coconut milk powder
20g cocoa powder
60g chia seeds
15g pistachios
20g desiccated coconut
360ml of warm water

Instructions
Boil a kettle of water and measure out 180ml hot and 180 cold water together for 360ml warm water.
In a medium mixing bowl, add the coconut milk powder and 360ml warm water, whisking to create a smooth milk.
Pour 55ml of the mixture into a bowl with the chocolate sachet and microwave for 30 second bursts, whisking in between until you have a smooth ganache. Set aside and chill in the fridge.
Next put the cocoa powder and coconut sugar in a small bowl. Spoon in around 5 tablespoons of coconut milk and stir until you have a smooth paste with no lumps. Pour all of the paste back into the milk and whisk in the chocolate milk.
Add chia seeds to a shallow dish, pour in the chocolate milk and whisk once more to combine. Then cover and refrigerate overnight. If you are in a hurry you can put the chia in the freezer for 30 minutes, or until it’s achieved a pudding-like consistency. It may also be helpful to give the mixture an extra whisk/stir once it has been in the freezer every 15 mins.
Layer up the pudding bowls with fruits, ganache, the pudding mix, nuts and coconuts. Decorate with additional nuts, fruit and coconut before digging in. You can also add coconut whipping cream or yoghurt for extra creaminess. Enjoy!
You can keep the pudding in the fridge for up to 3 days, although these are best served when fresh.
