These optionally vegan pancakes couldn't be simpler. They're perfect for brunch with family and friends or great to make with kids too. Each mouthful has a pop of luxury dark chocolate chips and they are further drenched in a decadent chocolate sauce topping.
Add fresh summer fruits for added tartness to cut through the rich chocolate.

200g vegan pancake mix
55g Rainforest Alliance vegan dark chocolate
55g Rainforest Alliance vegan dark chocolate
280ml of milk (oat, soya or dairy)

Instructions
Empty the sachet of pancake mix into a bowl.
Slowly pour in 220ml of the milk and whisk simultaneously. You want a smooth batter with no lumps.
Open up one sachet of the chocolate drops and stir into the batter gently.
Heat a shallow frying pan and brush it with oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them.
Chocolate sauce
Take the remaining sachet of chocolate and empty into a microwavable bowl or saucepan. Pour in 60ml of remaining milk and heat in the microwave for 15 second bursts until you have a smooth sauce. Alternatively you can heat in a saucepan over a gentle heat stiring until you have a smooth sauce.
Pour the sauce over the pancakes add fresh fruit if desired. Enjoy!
