Crème Brûlée translates from the French for burnt cream. This dessert consists of a rich custard base topped with a layer of hardened caramelised sugar. Served slightly chilled, our recipe uses oat cream meaning it is vegan friendly and dairy free. We recommend adding on our beautiful contemporary ramekins and a kitchen blowtorch to help perfect your treats.
This dessert can also be prepped ahead of time. Prepare the custard a day in advanced and blowtorch just before serving.

Preheat the oven to 150C and put your ramekins in a roasting tin.
Slit the vanilla pod in half lengthways, scrape out the seeds and then set aside.
Pour the two cartons of cream into a small, heavy-based pan and put the vanilla skin in to infuse. Bring to the boil over a medium-low heat, then take off the heat.
In a small bowl, take the 3 custard powder sachets, half of the sugar and mix to make a paste with 100ml water.
Alternatively, if you prefer to make a Crème Brûlée with eggs, take 2 yolks, one custard powder sachet and half of your sugar into a medium bowl and whisk until well combined.
Strain the cream into the paste and discard the vanilla skin. Next, add in the vanilla seed you set aside, we find that adding the seeds at the end brings out a richer flavour.
Divide the mixture between the ramekins and pour cold water into the tin until it reaches two-thirds of the way up the ramekins. Bake for about 20 minutes until the custard is set. It should only wobble slightly when shaken. Next, cool for at least 2 hours.
Scatter the tops of the cold Crème Brûlées with the remainder of the sugar. Use a blowtorch or pop under a grill to caramelise the tops and enjoy!
