These vegan coconut milk pancakes with a pineapple topping couldn't be simpler. They're perfect for a brunch with family and friends and great to make with kids too.
This kit is vegan and gluten free and makes approximately 8 pancakes.

40g caster sugar
50g coconut milk powder
113g pineapple chunks in juice
20g desiccated coconut
355ml of water

Instructions
Sift the flour and baking powder into a bowl and stir in 2 tbsp of the sugar.
Make the coconut milk in a bowl with 355ml of warm water. Whisk thoroughly, then measure out 300ml into a separate jug.
Stir the 55ml of milk slowly into the flour mixture to make a smooth batter.
Heat a shallow frying pan and brush it with oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them.
Meanwhile, separate the juice and the pineapple chunks using a sieve and pour the juice into a pan.
Pour in the remaining coconut milk and sugar, simmering until the mixture thickens to the consistency of single cream.
Fry the pineapple chunks in the same pan you were using for the pancakes.
Pour the sauce over the pancakes and top with the grilled pineapple chunks and a sprinkling of desiccated coconut. Enjoy!
