Vegan Tropical Pancakes

Ingredients included:

  • Pancake mix: 150g plain flour (or gluten free flour in the GF version), 5g gluten free baking powder, 40g sugar
  • Coconut milk: 50g coconut milk powder
  • 113g pineapple chunks in juice
  • Desiccated coconut 10g 

 

You will need to add:

  • 360ml of water
  • Oil for frying

 

Method

  1. Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the sugar and a pinch of salt. 
  2. Make coconut milk into a bowl with 360ml of lukewarm water, whisk thoroughly, then measure out 300ml into a separate jug.
  1. Stir the milk slowly into the flour mixture to make a smooth batter
  2. Heat a shallow frying pan and brush it with oil. Use 2 tbsp of batter to make each pancake, frying two at a time – any more will make it difficult to flip them.
  3. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry. They will be a little more delicate than egg-based pancakes, so turn them over carefully and cook the other sides for 1 min. Repeat to make 8-10 pancakes.
  4. Meanwhile, separate the juice and the pineapple chunk using a sieve and pour the juice into a pan.  Pour the remaining coconut milk . And the sugar, simmer until the mixture thickens to the consistency of single cream.
  5. Pour sauce over pancakes with grilled pineapple chunks and a sprinkling of desiccated coconut
